Apple- Cinnamon Fruit Bars

The community we live in is so cool in the fall (figuratively and literally).  There are so many people around with gigantic gardens willing to share their produce.  Or even not so big gardens, but incredibly fruitful ones.  I'm dreaming of next spring/summer already!  Not that we didn't have friends with gardens in TX that were just as fruitful, but it seems that there are more here (or we just made friends with the right neighbors! :) )  

At any rate, leaving church one Thursday there was a box of organic apples sitting there waiting for a good home.  The box said "great for pies!"  DH suggested we take some and I could make a pie.  Oh, how I wish I took that class!!  But, these were really good apples, I just couldn't pass them up.  We later had the same priest over who was offering these apples and I just had to make something with them.  This is what I made.  It was a huge success!  I gave some to the boys for lunch and they actually called them apple pie squares.  Thank you Eating Well!
INGREDIENTS

CRUST

  • 1 cup chopped nuts (walnuts, pecans, almonds or hazelnuts) or old-fashioned rolled oats, divided
  • 3/4 cup whole-wheat pastry flour (see Tip)
  • 3/4 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • 1 large egg
  • 2 tablespoons canola oil
    • 1 teaspoon vanilla extract
    • 1/4 teaspoon almond extract

    FRUIT FILLING

    • 6 cups diced peeled apples, divided
    • 1/2 cup apple cider or orange juice
    • 1/2 cup sugar
    • 1/4 cup cornstarch
    • 1 1/2 teaspoons ground cinnamon
    • 1 teaspoon vanilla extract

PREPARATION

  1. To prepare crust: Combine 3/4 cup nuts (or oats), whole-wheat flour, all-purpose flour, sugar and salt in a food processor; pulse until the nuts are finely ground. Add butter; pulse until well incorporated.
  2. Whisk egg, oil, 1 teaspoon vanilla and almond extract in a small bowl. With the motor running, add the mixture to the food processor. Process, then pulse, scraping down the sides, if necessary, until the mixture begins to clump, 30 to 45 seconds (it will look crumbly). Measure out 1/2 cup of the mixture and combine in a bowl with the remaining 1/4 cup chopped nuts (or oats). Set aside for the topping.
  3. Preheat oven to 400°F. Generously coat a 9-by-13-inch baking dish with cooking spray.
  4. To prepare fruit filling & assemble bars: Combine 4 cups apples, cider (or orange juice), sugar and cornstarch in a large saucepan. Bring to a simmer over medium heat, stirring constantly, until the mixture is very thick, 4 to 5 minutes. Stir in the remaining 2 cups apples, cinnamon and 1 teaspoon vanilla.
  5. Transfer the dough to the prepared baking dish. Spread evenly and press firmly into the bottom to form a crust. Spread the fruit filling over the crust. Sprinkle the reserved topping over the filling.
  6. Bake the bars for 15 minutes. Reduce oven temperature to 350° and bake until the crust and topping are lightly brown, 25 to 30 minutes more. Let cool completely before cutting into bars, at least 1 1/2 hours.

TIPS & NOTES

  • Make Ahead Tip: Cover and refrigerate the crust and topping (Steps 1-2) for up to 1 day. Cover or individually wrap and refrigerate the cooled bars for up to 5 days.
  • Tip: Lower in protein than regular whole-wheat flour, whole-wheat pastry flour is milled from soft wheat and has less gluten-forming potential, making it a better choice for tender baked goods. You can find it in the natural-foods section of large supermarkets and natural-foods stores. Store in the freezer.

Refreshing Summer Salad

I would be remiss if I didn't include this salad in my collection of favorite recipes.  It is by far the recipe I am most requested.  I'm not sure where it originated, but my mom gave it to me from someone at her work.  Since then, it may have either her name or my name connected to it (depending on who's preparing it).  It's the perfect blend of sweet, tart, tang, and crunch!  I'm sure you could substitute other fruit for the strawberries, but why?

Romaine lettuce and/or Baby Spinach
1/3 C Red Onions, diced (I've also used sliced, which are a bit easier to see and pick up)
1 qt fresh strawberries (if you have kids, be sure to have extra!)

Dressing:
1 C Mayo or Miracle Whip (I've also used as little as 1/2 C without any other alterations, just as good, not as thick)
1/2 C Milk
2 T Cider Vinegar (I've also used white wine vinegar-- just as good)
1/3 C Sugar
1 to 2 T Poppy Seeds

I think originally the recipe called for mixing everything, including the dressing, but I like to hold the dressing on the side.  It allows guests to pour what they want without making the salad to wilty if it sits out a bit longer.

Pomegranate and Banana Salad

Oooh how I love the fall.  I love the colors.  I love the weather.  I love the food.  We typically see pomegranates come out about this time.  These are not fruits that I would frequently buy.  In fact, I hadn't bought them since, well, since I started shopping for myself!  But, our oldest son came home one day extremely excited about the snack they had had at preschool.  What was it?  Pomegranates!  So, I became excited because my baby found a new healthy food he loved so much and I thought the rest of us would agree.  I was right.  Soon after, I found this recipe, which I have fallen in love with.  It is the perfect combination of tart and sweet and the flavors compliment each other so well.  If I wasn't a mommy, I KNOW I could eat the whole thing in one sitting!  But, I AM a mommy, and I must share,... I must!  I think I originally found this on the CDC website somehow, but I can't find it now.  This is a link to the same recipe from the pomegranate council.  Now that I'm looking again at my printout, I see the reference back to the pomegranate council.  So, there you have it! 

2 pomegranates, chilled
3 bananas
1 tablespoon palm sugar or brown sugar
2 limes (or 1/4 cup freshly squeezed lime juice)



Mix together the juice of the limes and the tablespoon of sugar. Adjust sweet and sour to taste. Score and seed both pomegranates freeing the seeds. Mound the pomegranate seeds in the center of the salad plates and slice the bananas around the perimeter of the seeds. Drizzle with the prepared lime dressing and serve.
Serves 4.
